Butternut Squash is a type of winter squash. It has a sweet, nutty taste similar to a pumpkin. It has a yellow skin with an orange fleshy pulp. When ripe, it turns increasingly deep orange, and becomes sweeter and richer in flavor. Butternut squash is composed of many vital poly-phenolic anti-oxidants and vitamins. As in other Cucurbitaceae members, butternut squash is low in calories; 100 grams provide only 45 calories. It contains no saturated fats or cholesterol; however, it is a rich source of dietary fiber and phyto-nutrients. Butternut squash is a common recommendation (from dietitians) to control cholesterol.
