Varying in size and length, depending on both season and variety, the pods should be medium to dark green and approximately 5 to 7 inches long. Beans should be harvested when the pods are firm, crisp and fully elongated, but before the seed within the pod has developed significantly. Green beans are tender and do not have a fibrous string that needs to be removed. They are a healthy source of carbohydrates and a moderate source of protein, dietary fiber, vitamin C, beta-carotene and calcium.
